Cocktails & Dreams: Ep. 3 Break the Ice

Effervescent & Refreshing

This week on Cocktails and Dreams, we’ve made you a beer cocktail that features Icebreaker Brut IPA!

Effervescent and refreshing, Break the Ice is the perfect cocktail to take the heat out of the first heatwave of 2020.

Break The Ice

Sugar 1/2 tsp
Splash of Soda Water
Sparkling Wine 3 oz
Icebreaker 5 oz
3 dashes of Ginger Bitters
Pear for garnish

1. Combine sugar and soda water in mixing vessel
2. Add and stir together sparkling wine, Icebreaker, and bitters.
3. Strain into chilled champagne coupe.
4. Enjoy!

Lazy Days of Summer

The warm haze that fills the skies, the golden glow of fireflies, and the soothing song of whip-poor-wills; these are the tokens of summer and we cannot get enough.

With the tropical taste of passion fruit and the clean, piney notes of an IPA, this beer is our attempt to can those lazy, hazy, crazy days of summer.

Available online for home delivery in Ottawa and the Ottawa Valley and Ontario-Wide shipping. Also available through our Lakeside Drive-Through.

Cocktails & Dreams: Ep. 2 Dark and Stormy

Welcome to Cocktails & Dreams, where the bar is always open… because it’s at home.

Hold onto your hats! This week on Cocktails & Dreams, we’ve made a classic cocktail for you, Dark and Stormy. This cocktail is great to have in your repertoire; it’s easy to make and delicious to drink.

On this week’s episode, you’ll meet a new face! You might recognize him from Lakeside Brew Pub, our friendly, talented, and sometimes hard to understand bartender, Brandon!

Dark and Stormy

Screech 2 oz
Ginger Beer 8 oz
Lime Wedge
Rosemary 2 sprigs

1. Pour 2 oz of Screech into you mixing vessel
2. Remove the rosemary needles from stem and drop them in with the Screech, followed by a lime wedge. Muddle these three ingredients well.
3. Pour in ginger beer and stir well.
4. Pour your cocktail into a glass over ice.
5. Slap a sprig of rosemary and use it as garnish.
6. Enjoy!

Cocktails & Dreams: Ep.1 Blood Moon Sangria

Blood Moon Sangria

Welcome to Cocktails & Dreams, where the bar is always open…because it’s at home.

Just in time for warmer weather, we are pleased to introduce you to our latest series that will help you whip, shake, or stir up the perfect cocktail for all your alfresco dining.

From traditional cocktails to beer-tails, we’re diving into the fine art of bartending and giving you recipes that you can make at home!

For our first episode, we’ve made the perfect long weekend recipe, Blood Moon Sangria. Enjoy!

Blood Moon Sangria

4 oz Red Wine (we used Merlot)
4 oz Blood Moon Blood Orange Sour
2 oz Orange Juice (we prefer pulp-free, but whatever you prefer works!)
1/2 tsp sugar
Splash of Soda Water
2 slices of Orange
2 slices of Lemon
2 slices of Lime
Mint for garnish

1. Combine sugar and soda water in vessel
2. Drop in 1 slice of orange, lemon, and lime. Use a mortar to squeeze out citrus juices and combine with sugar and soda water
3. Pour in red wine, Blood Moon, and orange juice and stir thoroughly
4. Pour into your glass and garnish with a slice of lemon, lime, orange, and a spring of mint
5. Enjoy!

Ep. 6: Cooking With Beer – Season Finale

Quick, easy, and delicious. Three simple words, one fantastic meal. On the season finale of Cooking with Beer with Chris, we’ve whipped up a real crowd-pleaser: Meatball Subs made with Midnight Stout!

We have a feeling this easy-to-make and messy to eat meal will become a regular feature around your table this summer. Enjoy!


Olive oil
1 Small Potato
500 g Ground Beef
2 sprigs of Fresh Rosemary
Ciabatta Bread Rolls
1 splash of Red Wine Vinegar
100 g your favourite cheese

2 Red Onions
2 Tomatoes
2 Celery Stalks
1 Heaped tbsp Plain Flour
½ can of Midnight Stout
500 mL Beef Stock
1 tbsp Hot Sauce
1 tbsp Worcestershire Sauce
2 tbsp Mustard
1 tbsp Honey
1 tsp Fennel Seed

1. Preheat the oven to 200°C/400°F/gas 6. Lightly grease a large roasting tray.

2. Peel and coarsely grate the potato, then add to a bowl with the minced beef. Mix together, then roll the mixture into balls, slightly larger than a golf ball

3. Reserving 3 to one side, place the meatballs into the prepared roasting tray, then season the meatballs with sea salt and black pepper, then place in the hot oven for 20 to 25 minutes, or until golden and cooked through.

4. To make the gravy, brown the beef, then add the chopped onion, celery and fennel seed. Fry until veg soften.

5. Add tomatoes and cook for 3-4 minutes

6. Stir in the flour and cook for 2 minutes, then add the Midnight Stout and leave to boil and bubble away.

7. Pour in the stock and stir in the remaining ingredients, then bring to the boil and reduce to a simmer.

8. Once cooked, remove the tray from the oven and place over a medium heat on the hob. Pour over the gravy, add the rosemary sprigs and simmer for a few minutes.

9. Toast your ciabatta.

10. Grate over the cheese and remove from the heat.

11. Spoon in the cheesy meatballs and gravy (discard the rosemary sprigs, then serve with any leftover gravy for dunking.

Just because you won’t be able to enjoy an in-person meal with your mama this Mother’s Day, doesn’t mean that you can’t provide one for her. Send or Pick-Up Beer

We don’t deliver on Sunday’s, but you can get beer for mom before or just after Mother’s Day via our Home Delivery or Shipping options. Live locally? Pick some up through our drive-through and drop it off at her door.

Repurpose your Growler

Those empty growlers double as beautiful vases. Pick up some cut flowers from your local flower shop or pluck from your garden and delivery them to her porch in a growler. Reduce, reuse, recycle.

Beer Cocktail: Beergarita


Happy Cinco de Mayo, everyone! While we would have loved to have you enjoying tacos and drinking beergaritas with us at Lakeside Brew Pub, instead, please enjoy this tasty recipe while sitting out in the sun this evening!


1 lime, cut into wedges

1/4 cup ground Himalayan Salt

2 cans Farmer’s Daughter or Icebreaker*, chilled

1/2 cup thawed Limeade Concentrate

1/2 cup Tequila

Ice cubes


Rub lime wedges around rim of four glasses.

Dip glass in salt to lightly coat rim.

In a pitcher, combine beer, limeade, and tequila.

Fill glasses with ice then pour over the beergarita mixture.

Garnish with slice of lime. Enjoy.

Note: Looking for something spicy? Add fresh jalapeno to your beergarita mixture and stir in.

*Astrolabe, Legion Lager, or your favourite light-coloured beer would be great, too!
