Cocktails & Dreams: Ep. 5 Dueling Winds


With the opening of patios across Ontario, it is safe to say summer has arrived. To celebrate, we invited Greg, from Umbrella Bar in Ottawa, to school us in the art of tiki-inspired cocktails. Duelling Winds is sure to blow your socks off; it’s filled with not one, but two types of rum, and packs a heap of tropical flavour. Enjoy!

If you haven’t been to Umbrella Bar, we recommend you check it out! The patio has stunning views of Dow’s Lake, a decadent menu, and an excellent selection of beer and cocktails.

Dueling Winds

Ingredients:
1.5 oz Dark Rum
1 oz Gin
.75 oz Orange Curaçao
.5 oz Yellow Chartreuse
.5 oz Overproof Rum
1 oz Grapefruit
1 oz Lime
1 oz Falernum

Method:
1. Combine all of the ingredients in a shaker with ice.
2. Shake vigorously for 20 – 30 seconds
3. Strain into glass and top with crushed ice.
4. Garnish with mint and edible flowers
5. Enjoy!

Our Patios Are Open!

Both Lakeside and Riverside patios open today at 11:00 am. We strongly recommend reservations; you can make them online or by calling Lakeside (613) 646-0101 or Riverside (613) 582-7227. To ensure proper distancing, we are only accepting tables of 8 or less for the time being.

We will have patio heaters and better lighting up in no time to elevate the al fresco dining experience.

Our Bottle Shops are also open; we ask that you follow the appropriate signage to ensure everyone a safe and pleasant experience.

Our Beer and Food Drive-Through will remain open at Lakeside Brew Pub, too! We’ve moved its location, so keep an eye on the signs.

We kindly ask for your patience as we work through the next phase. If you have any questions, feel free to call, email, or send us a message.

Safety Precautions

  • All of our tables are spaced in accordance with the provincial health & safety guidelines. We are operating at reduced capacity to ensure everyone has the space to maintain physical distancing protocols.
  • Tables are thoroughly sanitized before and after each guest; as are all other contact points such as bathrooms, payment methods, menus, etc.
  • For your safety and convenience, we have made our menus digital. Simply scan the QR code on your table to access the menu. We have paper menus available should you prefer that option.
  • We monitors our team’s health before each shift to ensure the safety of our team and guests.
  • Hand washing maintains a top priority. Our team will be washing their hands between all contact. For your convenience, we have sanitizer available for your use.

Cocktails & Dreams: Ep. 4 Cosmopolitan


Brandon is back with another classic cocktail that is just as easy to shake up for one as it is to prepare ahead for a crowd.
While it was made famous by four fictitious ladies in NYC, the Cosmopolitan has been around for a long time. It is a classic and timeless cocktail that balances tart and sweet perfectly – enjoy!


Cosmopolitan

Ingredients:
Vodka 2 oz
1 oz Orange Liqueur
2 oz Cranberry Juice
Juice of 1 Lime
Small handful of fresh cranberries for garnish

Method:
1. Combine vodka, orange liqueur, cranberry juice, and lime juice in a shaker with ice.
2. Shake vigorously for 20 – 30 seconds
3. Strain into chilled martini glass and garnish with fresh cranberries
4. Enjoy!

This week on Cocktails and Dreams, we’ve made you a beer cocktail that features Icebreaker Brut IPA!

Effervescent and refreshing, Break the Ice is the perfect cocktail to take the heat out of the first heatwave of 2020.

Break The Ice

Ingredients:
Sugar 1/2 tsp
Splash of Soda Water
Sparkling Wine 3 oz
Icebreaker 5 oz
3 dashes of Ginger Bitters
Pear for garnish

Method:
1. Combine sugar and soda water in mixing vessel
2. Add and stir together sparkling wine, Icebreaker, and bitters.
3. Strain into chilled champagne coupe.
4. Enjoy!

Cocktails & Dreams: Ep. 2 Dark and Stormy

Welcome to Cocktails & Dreams, where the bar is always open… because it’s at home.

Hold onto your hats! This week on Cocktails & Dreams, we’ve made a classic cocktail for you, Dark and Stormy. This cocktail is great to have in your repertoire; it’s easy to make and delicious to drink.

On this week’s episode, you’ll meet a new face! You might recognize him from Lakeside Brew Pub, our friendly, talented, and sometimes hard to understand bartender, Brandon!

Dark and Stormy

Ingredients:
Screech 2 oz
Ginger Beer 8 oz
Lime Wedge
Rosemary 2 sprigs

Method:
1. Pour 2 oz of Screech into you mixing vessel
2. Remove the rosemary needles from stem and drop them in with the Screech, followed by a lime wedge. Muddle these three ingredients well.
3. Pour in ginger beer and stir well.
4. Pour your cocktail into a glass over ice.
5. Slap a sprig of rosemary and use it as garnish.
6. Enjoy!

Cocktails & Dreams: Ep.1 Blood Moon Sangria

Blood Moon Sangria

Welcome to Cocktails & Dreams, where the bar is always open…because it’s at home.

Just in time for warmer weather, we are pleased to introduce you to our latest series that will help you whip, shake, or stir up the perfect cocktail for all your alfresco dining.

From traditional cocktails to beer-tails, we’re diving into the fine art of bartending and giving you recipes that you can make at home!

For our first episode, we’ve made the perfect long weekend recipe, Blood Moon Sangria. Enjoy!

Blood Moon Sangria

Ingredients:
4 oz Red Wine (we used Merlot)
4 oz Blood Moon Blood Orange Sour
2 oz Orange Juice (we prefer pulp-free, but whatever you prefer works!)
1/2 tsp sugar
Splash of Soda Water
2 slices of Orange
2 slices of Lemon
2 slices of Lime
Mint for garnish

Method:
1. Combine sugar and soda water in vessel
2. Drop in 1 slice of orange, lemon, and lime. Use a mortar to squeeze out citrus juices and combine with sugar and soda water
3. Pour in red wine, Blood Moon, and orange juice and stir thoroughly
4. Pour into your glass and garnish with a slice of lemon, lime, orange, and a spring of mint
5. Enjoy!
